I love homemade no bake granola based treats. Whenever I need an energy boost or a sweet craving satisfied, these are the bars I turn to.
They are incredibly easy to mix up and then all you do is press the mixture into a 7×11 pan and freeze for a couple hours. Voila! Thick and chewy and oh so delicious cereal bars.
When you bite into them, you get the crunch from the cereals, but also the chew, because the peanut butter and honey mixture soaks into the cereal, holding the bar together and ensuring the peanut (or almond) butter flavor gets throughout the entire pan. These will keep you full and energized for a long time, trust me! But they are so good, I can’t just eat one.
I leave mine in the freezer because I like them cold. Honestly, I think they taste more peanut butter-y when frozen. They don’t get hard, they just get firm and chewy. It is soooo good.
I’ve had a couple people ask me about moving from Blogger to WordPress. Don’t worry, that post is coming. I will say, it is scary, time consuming business. But I honestly had the easiest transfer ever thanks to Erin over at Black Chicken Hosting.
She was recommended to me via Adrienne at Whole New Mom and I am so grateful Adrienne introduced me to her! Because I hosted with her, Erin transferred my blog without any extra cost. I can’t tell you how long I looked for someone to transfer my blog and I am so glad I waited, because I saved a good 100 bucks easy. Not only that, she downloaded WP.org for me, and then when it came to the actual transfer, Erin did it so fast, I didn’t even have time to get nervous about my stuff transferring and all my followers and comments being saved. I couldn’t believe it! Not only did she do an incredible job, she was so easy to work with. I probably sent her a dozen emails about different stuff and she always responded, explaining things, offering advice, and making me feel somewhat in control (I wasn’t and am so glad I wasn’t – I would’ve crashed the site!) Erin is an incredibly personable and encouraging person and I highly recommend her. She went above and beyond what I could’ve expected.
A cheesy analogy, but she stuck with me and kept up my energy for blogging. If I had had a poor transfer and files had been lost or money wasted, blogging wouldn’t have been fun. She let me continue blogging without any stress or hair pulling episodes. So, in honor of that, I made these bars. Plus, they taste incredible and I like any excuse to eat them
- ¾ cup peanut butter (or almond butter)
- ½ cup honey
- ½ cup almond milk
- 1 cup crispy rice cereal
- 1 cup slightly crushed bran flakes
- 1 cup slightly crushed plain shredded wheat
- 1 cup old fashioned oats
- ½ cup steel cut oats
- Mix peanut butter, honey, and almond milk in a large bowl,
- Add remaining ingredients and stir.
- Press into a lightly greased 7x11 pan.
- Freeze for at least an hour.
- Cut into 12 bars and enjoy!
- Store leftovers in freezer.
