I am SO excited to have Gloria here at The Sweet {Tooth} Life today!  She constantly amazes me with her wide range of creative recipes and incredible photography.  Seriously, this lady is talented.  But there are a lot of good blogs with recipes and photography out there.  What makes Gloria stand out is her sweet personality.  I remember reading her replies to my comments and feeling important and appreciated, which, coming from a bigger blogger like her, meant a lot.  She takes the time to read and leave meaningful comments in addition to churning out recipes like (my all time favorite) Crushed Lemonheads Lemon Ice Cream (pun totally intended AND she linked below and I totally did not plan that.  Its proof you need that recipe)

Hello Everyone!  I’m Gloria and I blog over at Simply Gloria.  I am so ecstatic to be hanging out with you over here with sweet Mary Frances.  I’m a huge fan of all of her creations.  And, I definitely know you are, too!

Soft baked Rainbow Cake Mix Cookies with white chocolate chips and endless amount of funfetti sprinkles.  One taste and you’ll never guess they were made with a cake mix!

Have you ever been in a situation where you needed and wanted fresh baked cookies in a hurry?  And, don’t really want to take the time to make a fuss in the kitchen?

I’ve been there many times!

It usually happens right before bed.  Granite, I’m not really a nighttime baker.  But, when I’ve realized I have no baked goods to leave out for our milkman, I panic.

Cookies for the milkman is perfect, don’t you think?  I seem to think so!

Rainbow Cake Mix Cookies from Simply Gloria

Ingredients
  • 1 (16.25 ounce) package Party Rainbow Chip cake mix
  • 10 tablespoons unsalted butter, softened (not melted)
  • 1 large egg
  • 1 cup white chocolate chips
  • 2 tablespoons sprinkles
Instructions
  1. Preheat oven to 350 degrees.
  2. Combine cake mix, butter, and egg together.
  3. Stir in white chocolate chips and sprinkles.
  4. Use a medium cookie scoop and scoop cookies onto a covered (parchment paper or silicone baking mat) baking sheet about 2 inches apart.
  5. Bake for 8-10 minutes. Allow the cookies to cool on the hot baking sheet for 3-5 minutes. Then transfer to a cooling rack or a clean flat surface.
Notes
Makes about 2 dozen cookies. Store in a closed container for up to 3 days.

Told you.  You’re drooling now, yes?  If I was home, you can bet I’d be whipping these up in a heartbeat – who can resist funfetti?  I don’t have a milkman, but it helps my justify my need to reach for seconds … and fifths!  Thank you Gloria, this recipe is sure to be a hit at home, at parties, and especially in my mouth! :)
