First of all, is this not the cutest plate and straw combo ever? Thanks to my incredible friends, they not only got me food props I had been wanting (STRAWS) they coordinated perfectly. Without trying. This is obviously why they are my friends.
Secondly, this whole late night thing and early morning thing are just not thinging for me right now.
The struggle is very real.
For the past 16 years of my life, I’ve been an early bird. It wasn’t until the last three weeks that suddenly I couldn’t get up early after staying up late. No more 6:30 effective alarms. I either get up early after a late night and get about 15 minutes of productivity before turning into a sleepy, grumpy, stereotypical sleep deprived person OR I sleep in and then spend the hour after getting up pretending it is a weekend.
So yeah, that is why you are getting this post at noon.
But it is all good because if you are looking for lunch of snack (or breakfast, I don’t judge anymore) this is for you! It is healthy, packed with fruits and veggies, and tastes and looks amazing.
Seriously, it did wonders for me. Even better than coffee.
- ½ cup frozen blueberries
- ½ cup frozen raspberries
- 1 large very ripe banana
- 7-8 ice cubes
- ¾ cup unsweetened almond milk
- 1 teaspoon vanilla
- ¼ teaspoon cinnamon
- 1 Tablespoon agave nectar (optional)
- ½ ripe avocado
- ¾ cup fresh spinach
- Blend all the ingredients in a blender.
- Serve and enjoy!
