This one minute mug cake is laced with brewed coffee and fresh coconut cream. You can’t say no!
I have the luxury of doing childcare for a small church that meets at a coffee shop and I get to have anything off the menu during ‘work.’ It has given me a small taste of what people who frequent coffee shops get and I have to say, I like it. The baristas know your name, you know theirs, they know what you order and also what to suggest.
I usually get black coffee (I know, holla for the boring) but a couple weeks ago, it was cold, I was a little out of it, and needing something other than black coffee. So (and this is classic me) I’m at the counter with the kiddos and I’m like, “so, is the soy chai tea latte a thing?” The barista looks at me and was like, “… yes, it’s a thing.” So, he makes me one and tells me, let me know what you think. And gosh, it was so good. I told him that and he just laughed. He was like, “Mary Frances, you get plain black coffee every time. Of course something with sugar is going to taste good.”
It still makes me laugh when I think about it now. I love coffee shops, y’all, with a passion.
And coffee mugs. And mug cakes. This is the best of both worlds because not only do you get your coffee, you get your cake, AND the mug. Ding ding ding we have a winner!
Welcome to Mug Cake Mondays! Here we will be celebrating the modern wonder, the microwave, and how you can have cake in less than five minutes. I couldn’t not do coffee, it just runs in my blood now, I am convinced.
This mug cake is for the coffee lover. There are 3 Tablespoons of coffee in here, making up the bulk of the liquid and flavor. The vanilla and sugar give it the cake flavor while the oil and milk keep it soft and moist. I used So Delicious’ coconut milk because 1) it tastes the best and 2) I don’t like coconut milk plain (gasp, I know) but I love using it in baked goods and am always looking for new ways to use it.
I always mix my batter in a separate bowl and then pour it into the greased mug or ramekin and then microwave. Not only is this fast, it only makes one, meaning it will keep people like me from going back for thirds and fourths (because it is just that good.) The texture and flavor is spot on to real cake and have I mentioned how much I love the coffee part??
- ¼ cup all purpose flour
- 3 Tablespoons sugar
- ¼ teaspoon baking powder
- 1 teaspoon vanilla
- 3 Tablespoons strong brewed coffee
- 1 Tablespoon So Delicious Coconut Milk (unsweetened or organic)
- ½ teaspoon oil
- Whipped cream (I used coconut whipped cream)
- In a small bowl, whisk flour, sugar, and baking powder together.
- Stir in remaining ingredients and whisk well.
- Pour into a greased microwave safe mug or ramekin and microwave for 1 and a half minutes on power 8 (out of 10)
- Let cool before removing from mug or ramekin and top with whipped cream.
