It’s back to school season! You wouldn’t believe how stressful this is for me. You see, there’s this thing.
As a homeschool student, I never had to do the traditional back to school shopping. We ordered textbooks from around the web, reused pencils from last year, filed papers in whatever size binder we had on hand, and if I forget an assignment, just walked from one room to the other to grab it. (Granted, that changed a lot in high school when I’ve done co-op and college classes.)
Now, since I’m moving into the dorms in less than two weeks, I won’t have our own school library a hop and a skip from my room or the stapler in my mom’s office. And I actually have to purchase school supplies. Do you know how stressful purchasing pens are?? I literally spent ten minutes at WALMART for crying out loud, looking at all the pen and pencil options.
“so this is ten for $10.”
“oh but this is only $2. Are pens like shoes, like, you get what you pay for?”
“maybe I don’t need pens. Maybe I just need pencils. They’re a whole lot cheaper …”
“But all that color coded note taking I wanted to do!”

“it’s still $10. Do you think I can find them somewhere else for less?”
“can you buy pens used??”
The stress levels, unbelievable and ridiculous. Utterly ridiculous.
I bought the pens by the way. Best decision ever, they’re worth the $10. << no comments yall, no comments.
I know I’ll be needing some serious note taking materials. I also know I will be needing some serious snack food. So I made this energy snack mix and it is the bomb. There is no butter, no refined sugar, and it’s packed with fiber and protein.
This is so incredibly simple as well! There is no Ziploc bags or super long baking times in the oven and no crazy ingredients. It IS crunchy, just sweet enough, dusted with cinnamon and nutmeg, and sprinkled with chewy cranberries and nutty pistachios.
Basically, give me snack mix over pens anyyyyday of the week.
- 3 cups popped popcorn (2 Tablespoons unpopped kernels)
- 2 cups shredded wheat cereal
- 3 Tablespoons coconut oil
- 1 Tablespoon honey + 1 Tablespoon pure maple syrup (or 2 Tablespoons brown sugar)
- ½ cup pistachios
- ½ cup dried cranberries
- ½ cup cinnamon chips
